Capocollo, also known as Coppa, is a 7/8 month matured salami made from the neck of the pig, one of the tenderest parts of the pig.
It has an intense red colour with veins of fat that favour its softness.
Usually spiced with pepper and sweet chilli pepper, Capocollo has a savoury and sweet taste at the same time, strong and well balanced.
The pigs are bred exclusively in Italy, on a family-run farm located in the Parco Nazionale del Cilento e Vallo di Diano, which does not use any type of preservative, guaranteeing genuineness and quality. Our Capocollo is a certified organic product.
