Amarillo is a cheese matured for 90 days whose peculiarity lies in the notes of saffron, the most powerful antioxidant in nature, which not only gives it a unique color but also an unmistakable flavor.
Amarillo means “yellow” in Spanish and it is precisely this bright colour that distinguishes a cheese that was created a few years ago by the renowned Cilento company that takes care of the entire production process, from cattle breeding to milk processing, which manages to mix successfully, tradition and innovation.
